” Raw Almond Paté “
This raw almond paté is one of my favorite recipes and something I make on a regular basis. Paté keeps in the fridge up to 4 or 5 days in an air tight container. It’s a nice alternative to pack for lunches or have as a snack. Definitely a big hit at dinner parties served as a dip with celery, carrots, fennel and crackers. Of course there is an alchemy to mixing the ingredients, here is the basic recipe which you can modify to your personal taste. Enjoy!
“Ingredients use fresh organic “
1 cup of raw almonds
juice of 1 lemon
1 clove of garlic
pinch of salt
1 quarter to half cup of red onion
1 stalk of celery or more
1 quarter cup of parsley
1 tbs spoon or more (to taste) of olive oil
1 to 2 tbs spoon of tahini to taste
1 tsp dried dill or 1 or 2 tbs of fresh dill
“Soaking your Almonds”
First step is to place raw almonds in a mason jar with water. Refrigerate 2 to 3 days, change and rinse the water daily. Almonds will sprout or get little nub-lies after 2 to 3 days, strain and after final rinse, you’re ready for the next step.
” Almond therapy ”
Great time to Zen out and remove almond skins. Some people may call it tedious or prefer to leave skins on, it’s you’re personal preference.
“Prep lemon mixture and veggies”
In a blender mix lemon juice, garlic, olive oil, and salt. Blend to creamy consistency. Mince by hand or use food processor for the red onions, celery, parsley and fresh dill.
“Use a hand mixer or food processor “
If you’re using a hand mixer, place almonds in a deep bowl (avoids almond bits spraying). Add your lemon mixture and tahini. Blend to a smooth paté consistency, add a tbs or more of water for nice creamy texture. Using a food processor, pulse almond mixture, gradually add lemon mixture and tahini , water as required for a creamy paste.
” Final stage; minced veggies”
Now that your almond paste is a nice creamy consistency, stir in minced red onions, celery, parsley, add dried dill, or chopped fresh dill. Use a spatula to turn over and mix all the ingredients. At this point have a taste and tweak to your pallet. Keep in mind, that after a few hours or day of refrigeration, the flavors are a little stronger. Hope you love it as much as we do!
